BEST SUMMER BERRY SMOOTHIE
My children and I adore this smoothie! It is naturally sweet, loaded with antioxidants from the berries, potassium from the banana, calcium, iron magnesium and selenium form the maca powder and protein from the hemp seeds. This smoothie is prefect way to start the day!
1 cup fresh organic strawberries
1/2 cup fresh organic blueberries
1 frozen banana 2 Tbsp Hemp seeds (Nutiva)
1 Tbsp Maca powder (Nutiva)
1 1/2 cups coconut water (Vita coco)
Mix all the ingredients in a high speed blender (I use a Vita-Mix), start at a low speed and gradually increase speed until well blended (about 1 minute). Enjoy!!!
HEIRLOOM TOMATO SALAD
I had this delicious salad at The Clark Cook House in Newport, RI and loved it! I went to the farmers market in Middletown, RI and found the best Heirloom tomatoes and made the salad at home for a ladies luncheon and everyone raved about it. So simple and delicious using the freshest produce of the summer season. Tomatoes are rich in lycopene, a vital anti-oxidant that helps in the fight against cancerous cell formation. Free radicals in the body can be flushed out with high levels of lycopene.
3 heirloom tomatoes, sliced into wedges
1/4 cup fresh basil chiffonade
1/4 cup toasted pine nuts
1/2 cup cooked corn kernels
1/4 cup goat cheese, crumbled
1/4 cup aged balsamic vinegar
2 Tbsp extra virgin olive oil
Himalayan salt
Toss the tomatoes, basil, corn and pine nuts in a bowl. Drizzle with the balsamic and olive oil and sprinkle with himalayan salt. Arrange on two plates and top each plate with the crumbled goat cheese.
SPICED HUMMUS
Garbanzo beans (chickpeas) provide and excellent source of molybdenum. They are a very good source of folic acid, fiber and manganese. They are also a good source of protein, as well as minerals such as iron, copper, zinc and magnesium.
2 cups cooked chickpeas ( you can use organic canned ones, drained and rinsed)
6 Tbsp extra virgin olive oil
2 lemons, juiced (about 1/4 cups)
1 Tbsp tahini
1 garlic cloved, minced
1/2 teaspoon chili powder
1/8 teaspoon cayenne pepper
1 teaspoon cumin powder
Place chickpeas in food processor with remaining ingredients and puree until smooth and creamy (if too thick add a small amount of water). Place on a small platter and enjoy with crudites or with a toasted pitta bread.
